One of the typical dishes of the region and one of the tastiest in all of Colombia. Although it is usually made with snapper, other fish and seafood work well for this dish, which seduces anyone who tries it and seeks an extraordinary flavor.
The secret lies in the preparation: First, the fish is smoked for two hours and then shredded by hand. Meanwhile, a whole coconut is finely grated, then given three water baths to extract its milk. A bell pepper, an onion, garlic, and wild cilantro are chopped or grated, then preserved with the coconut milk. After this, the fish is added and left to reduce. With this, you’ll have all the flavor of the Colombian Pacific on your table!
Another popular dish in this destination. Preparing it is simple; you just need to buy the piangua meat directly or purchase the pianguas and manually remove the meat from the shell, allowing you to extract their juice without any issues.
In a deep container, add the pianguas and red onion sliced into thin julienne strips. Add the juice of lemons and oranges, salt, and pepper to taste, and refrigerate for about 15 minutes.
Chop cilantro, tomatoes, and red bell pepper into small pieces. Add the remaining ingredients and mix well to serve and enjoy a flavor very characteristic of the Chocoan region.

This spectacular and nutritious dish can be prepared with fish native to the Magdalena River, such as bocachico and capaz, though catfish is also a good option. Its preparation is simple, requiring only patience and love.
First, season the fish by mixing lemon juice with cumin, salt, and ½ tablespoon of oil. Coat the fish with this marinade and let it sit. Then, sauté half of the chopped green onion and garlic with 2 tablespoons of oil in a deep pot. Next, add water, yuca, corn on the cob, plantain, arracacha, and potatoes. Season with salt to taste. Cook over low heat, and when the ingredients are slightly soft, add the fish. Cover the pot and let it cook for 15 minutes.
To make the "Hogao," sauté the tomatoes with a bit of cumin, coloring or achiote, and the remaining green onion.
Another typical dish of the magnificent Nuquí. For the preparation, you only need: 3 pounds of your preferred fish fillet, olive oil, wheat flour, salt, pepper, soy sauce, garlic cloves, mustard. Ingredients for the borojó sauce: borojó concentrate, oyster sauce, hoisin sauce, cornstarch, fish broth, yeast.
For the preparation, heat a skillet and grease it with oil. Coat the fish in flour and proceed to fry. Separately, mix all the sauce ingredients, bring to a boil, and let it simmer.
